Roasted spiced brussels sprout & chickpea bowl w fennel salad

Yes, Summer is just around the corner…. BUT let’s not kid ourselves Melbounrites, its’ still a bit chilly up in here. So, to keep the fires burning at home and for those fabulous dinner parties at friend’s, get cracking with this warm and hearty but still healthy roasted spiced brussel sprout and chickpea bowl with fennel salad. Yum!


Ingredients

  • 1 garlic clove, finely chopped

  • 2 tsp ground coriander

  • 2 tsp ground cumin

  • About 100ml extra virgin olive oil

  • 500g brussels sprouts, trimmed, halved

  • 250g cooked chickpeas, drained

  • 250g Greek yoghurt

  • Handful of mint leaves

Fennel salad

  • 2 fennel bulbs (about 1kg), trimmed, fronds reserved

  • 1 small green chilli, such as serrano or jalapeno (optional), finely sliced

  • 1 tbs toasted sesame seeds

  • Juice of 1/2 lemon

  • 2-3 tbs extra virgin olive oil

Method

  1. Preheat the oven to 220°C.

  2. Mix the garlic, ground coriander, ground cumin and about 3 tbs of olive oil in a large bowl. Add the brussels sprouts and chickpeas, season with sea salt and black pepper and toss to coat.

  3. Spread the brussels sprout mixture out on a baking tray and bake for 30-35 minutes, tossing halfway through. If the mixture is dry, drizzle with a bit more oil. It is ready when the chickpeas are golden and the sprouts are tender.

  4. For the fennel salad, finely slice the fennel using a mandoline, food processor or sharp knife. Toss with most of the reserved fronds and chilli (if using), sesame seeds, lemon juice and olive oil. Season with sea salt.

  5. To serve, spread the yoghurt in a serving bowl or on a plate. Top with the roasted chickpeas and brussels sprouts, with the fennel salad alongside. Drizzle with oil, scatter over the mint leaves and the remaining fennel fronds, and season everything with a hit of salt and pepper.

It’s that time of year again, the daffodils are starting to bloom, the days are getting longer and the sun is finally starting to peak through those dark Melbourne clouds. It’s also that time of year when you start wishing you hadn’t had that third helping of pudding…. Here at The Hen and the Coq Events we are getting ready for the silly season and that includes our models! They are hitting the gym and getting ready to show off their fine physiques! One part of that is healthy eating and one of their go to drinks is the Green Smoothie!

I don’t know about you but I love Green Smoothies, they give you so much energy, help shift stubborn kilos and make your skin glow from the inside out.

Green smoothies are a great way to wake up, you actually feel virtuous downing one.

This avocado smoothie is no exception! 

This recipe has all the nutrients from its ingredients that you need to get going in the morning: protein, healthy fats, and replenishing electrolytes. The superstar ingredient is avocado. Avocados boast a lovely dose of omega-3 essential fatty acids, which are vital for brain development and nerve function and have Vitamin K which is like the love drug of skin.

 Green Smoothie Recipe

This smoothie has everything you need to get you going in the morning— healthy fats, electrolytes and protein. Adding avocado to smoothies gives you a lovely dose of omega-3 essential fatty acids, which are vital for brain development and nerve function. Not only that, but the avocado also assists the body in absorbing nutrients from the greens.

INGREDIENTS

1 1/2 cups fresh spinach

1 cup coconut water, unsweetened

1 ripe pear, cored

1/2 cup mango, frozen

1/4 avocado

2 tablespoons hemp hearts

 

INSTRUCTIONS

Blend spinach and coconut water together until smooth.

Add remaining ingredients and blend again.

You can either blend in hemp hearts or sprinkle on top— whichever you prefer!
